If a fruit is gonna get reworked and will go off-sale, people will pay a lot for the fruit to have it in their inventory and be ready for the update, and the fruit will gain way higher value, simply because it's hyped. Then the update drops and everyone wants to try out the new fruit, therefore increasing in it's value even more. After a certain amount of time, wast majority of players will have obtained the fruit, counterplays get discovered, and the fruit simply becomes more accessible and easier to get, and drops in value significantly.
Take examples from other fruits, like Mammoth. It was definitely a very valuable item in your inventory upon release, but now almost everyone forgets that the fruit even exists and gets overshadowed by other fruits, most notably by T-Rex.
Examples can be made form our real-life world too, like Fidget Toys (Fidget Spinners, Pop It, you name it). Back then, these blew up in popularity, but died out pretty quickly, especially Pop Its. Nowday nobody even talks about these thing, and they are probably collecting dust on the shelves.
Even I can tell a story of my own. I got a Dark Blade by trading Kit, 2x Gravity and T-Rex - something thats unimagineable for today's standarts. But back then, Gravity was as valuable as, if not more valuable than Gas.
TL:DR - In summary, if talking about hyped fruits and their values, then it's better to keep them until they are at their peak of value, but it's also better to trade them out as soon as possible when they are at their peak, because those fruits' values are unstable and can change drastically overnight.
But generally speaking, it depends on personal preference when talking about values.
